The Future of Food: blood, insects and brains

The Nordic Food Lab recently published an article citing that the future of human consumption could come from animal byproducts.

With increasing carbon emissions omitted from the livestock industry and the threat to freshwater, and also worldwide hunger, the practices could create sustainable alternatives.

Insects, blood and faeces may not sound particularly appetitising, but they are among the produce we should consider eating if we want our food to be sustainable and healthy, according to a team of chefs and scientists in Denmark.
